High Protein Mini Frittata Snack


  • 2 whole eggs
  • 2 slices of ham
  • 50g red capsicum
  • 1/2 small red onion
  • 30g grated cheese

  • Optional
    • 25g pure egg white protein powder
    • 50ml water to recombine
    • basil to garnish, salt and pepper to taste


    1. optional - re-constitute protein powder with 3 tbsp water, using fork or beater until an egg white consistency is reached
    2. preheat grill and pan
    3. whisk two whole eggs and set aside / combine with reconstituted egg white
    4. line a mini cup or friand tin with circles of ham
    5. quickly cook diced capsicum and onion in a non-stick pan
    6. combine with egg and fill baking tray cups
    7. top with grated cheese
    8. grill for approx 10 minutes until cooked
    9. garnish with basil leaves and salt and pepper to taste
  • Keeps well in the fridge for snack or high protein breakfast the eggs, cheese and ham are satisfying and will keep you feeling full for a good length of time.
