High Protein Mini Frittata Snack

DIRECTIONS
- optional - re-constitute protein powder with 3 tbsp water, using fork or beater until an egg white consistency is reached
- preheat grill and pan
- whisk two whole eggs and set aside / combine with reconstituted egg white
- line a mini cup or friand tin with circles of ham
- quickly cook diced capsicum and onion in a non-stick pan
- combine with egg and fill baking tray cups
- top with grated cheese
- grill for approx 10 minutes until cooked
- garnish with basil leaves and salt and pepper to taste
- Keeps well in the fridge for snack or high protein breakfast the eggs, cheese and ham are satisfying and will keep you feeling full for a good length of time.
