Healthy Chocolate Breakfast Muffins

9 ingredients, 5-minute prep, 12 minutes bake

DRY INGREDIENTS

  • 1 ½ cups almond meal
  • ½ cup chocolate protein powder (such as Formulite)
  • ½ cup coconut flour
  • ½ cup cacao powder
  • ½ tsp baking powder

WET INGREDIENTS

  • 3 eggs
  • ½ cup olive oil
  • ½ cup almond or coconut milk
  • ½ cup honey/maple syrup
  • DIRECTIONS

    1. Preheat over to 180° C
    2. Mix all dry ingredients together
    3. Beat eggs and combine with olive oil in a bowl
    4. Mix in milk and honey/maple syrup
    5. Mix wet and dry ingredients well
    6. Use a friand tin to provide a small portion size
    7. Cook for 12-15 minutes
    8. Freeze in groups of 2 (one serve)
