Chicken & Broccoli Casserole


1 bunch broccoli, chopped
1 onion chopped
3 cooked boneless, skinless chicken breasts, cubed or leftovers
1 tbsp Butter
1 cup Milk
2 tbsp plain Flour
1 cup grated cheese
Salt and pepper
1 tablespoon garlic powder
3.4 cup panko bread crumbs (or normal is that's easier)
2 tbsp butter


Preheat oven to 180 degrees C

Cook the onion until softened in a frying pan, with 1 tbsp Olive oil
Add the chicken over medium heat and cook until almost cooked through.

In a saucepan over medium heat, combine the butter and flour and stir vigorously until it forms a paste
Very gradually add the milk in stages while still stirring, let it come to a gentle simmer but not boil.
Add the cheese and stir till melted through, add generous salt and pepper and garlic powder until well combined
Add the broccoli and chicken to a casserole dish and top with the sauce
In a large bowl, toss the melted butter with the breadcrumbs.

Evenly spread the breadcrumbs over the top over the top of the casserole.

Bake, uncovered, at 180 C for 20 minutes or until bubbly in the centre and browned on top
