Skinny Greek Omelette

1 whole egg
20g BN Pure PRO
1 tbsp red onion
1/4 cup tomato
30g mozzarella cheese

Method

  • Step 1

    Mix BN Pure PRO with 3 tablespoons water, use a fork, or electric beater until an egg white consistency is reached

  • Step 2

    Mix in the whole egg and set aside

  • Step 3

    In a warm non-stick pan, greased with olive oil spray, cook onion until turning clear

  • Step 4

    Add the tomatoes and cook until tender - keeping these ingredients to one side of the pan

  • Step 5

    Pour in the egg and wait till it starts to become firm and bubbles form on the top

  • Step 6

    Add the cheese

  • Step 7

    Fold in half and wait for the cheese to melt

  • Step 8

    Flip if desired

  • Step 9

    Garnish with basil leaves and salt and pepper to taste
