Gingerbread Cookies
Ingredients
- 1 scoop Feel Good Tasteless Collagen Powder
- 1 Egg White
- 3/4 Cup Almond Meal
- 1/4 Cup Dried Dates
- 1 1/2 tbsp Coconut Oil, melted
- 1 1/2 tbsp Honey
- 1 tbsp Ginger Spice Mix (or 1 tsp cinnamon, ginger & nutmeg)
- 1 tbsp Baking Powder
Method

Preheat oven to 350°F
- Add Feel Good Tasteless Collagen Powder, almond meal, dates, baking powder and gingerbread spice mix to a blender. Blend well.
- When the mixture is solid, add egg white, coconut oil and honey to the blender. Blend until a delicate dough is formed.
- Place the rolled dough into the freezer for 20 minutes or into the fridge for 2 hours.
- Cut the cookie shapes from the dough. Put them on a baking sheet lined with baking paper. Bake for 10-15 minutes.
